A classic combination that you just can't beat. It's simple but really works and makes a lovely light lunch for those healthy january days!
I hope you've all had a lovely new year and I wish you health and happiness for the year to come. How did you celebrate? I headed down to watch the fireworks in London as I've always wanted to see it myself. We had a somewhat "sideways" view of the fireworks but the atmosphere was still great and it was lovely to be part of the celebrations.
I can't believe it's been a year of katie's kitchen journal- I've really enjoyed making it and am so grateful for everyone's support and comments. I can't believe how much it's developed since my first post and I'm really excited for the new year.
1/2 cup quinoa
Lemon juiceMixed salad leaves
Add the quinoa to a small saucepan along with 1 cup cold water. Put over a medium heat and simmer for roughly 10 minutes with a lid on until all the water has been absorbed. Remove from the heat and keep the lid on, leaving the quinoa to stand until cool.
Mix the salad leaves with the cooled quinoa in a serving bowl. Top with thin slices of pear, crushed walnut pieces and crumbled stilton.
Dress the salad with a little honey and lemon juice. Serve immediately.
